Recipes For Using Those Summertime Blues

With an abundant supply of British Columbia blueberries now available throughout the province and many places across Canada, maybe you’re now asking yourself, “What do I do with all of these blueberries?” Perhaps you’ve already eaten handfuls of them, started your days with pancakes and smoothies, baked a batch of muffins, and maybe a pie and a crisp too. Exhausted all of your regular go-to blueberry recipes? We’re here to help with a whole selection of inspiring ways to add BC blueberries to your summer menu!

Hot summer days mean cool treats for all of the family, like these Blueberry Yoghurt Ice Pops made with high-protein Greek yoghurt to keep little tummies full even when appetites wane. A more adult take is this Frozen No-Bake Blueberry Pie, which is elegant enough for a patio dinner with friends, but easy to make with the kids. And if you’ve already frozen your blueberries, they’ll speed up the process of making this Quick Blueberry Sorbet.

Bring your blueberries to the barbecue this summer with a Blueberry Barbecue Sauce that can be used on anything you like: ribs, steaks, burgers, chicken breast, or tofu! Whatever you choose, it will go perfectly with Savoury Blueberry Cornbread which includes a little rosemary and Parmesan cheese as well. On the side, put together some easy, refreshing salads, like this Blueberry, Watermelon, Cucumber and Feta Salad, or a sturdy Blueberry Superfood Salad that won’t wilt in the heat. 

Or maybe you’re just looking to relax on the patio with a cool drink. Make a batch of Iced Blueberry Green Tea and leave it in the fridge for refreshing breaks throughout the day. Looking for something stronger? This Blueberry Punch can be made in both a non-alcoholic or spiked version – just top off with either soda water or sparkling wine depending on the crowd.
