Healthy breakfast recipes

As kids head back to school, and the rest of us get back to work, the new year marks a time when many of us hit the “reset” button and try to introduce healthy habits. They say that breakfast is the most important meal of the day, and starting off on a healthy note can help set the tone for rest of your meals.

If you’re looking for wholesome breakfast options, look no further than blueberries! A half-cup serving packs plenty of nutritional punch: two grams of fibre, virtually no fat, vitamins and minerals including vitamin C, A and E, as well as potassium, calcium and magnesium, and just 44 calories. And they’re convenient too – you’ll find BC blueberries in the freezer aisle of your local supermarket all year round.

Incorporating blueberries into your morning meal couldn’t be easier. Get the blender out and whip up this Blueberry Breakfast Smoothie or a Blueberry Green Zinger Smoothie. Both contain lots of tummy-filling fibre along with the natural sweetness of blueberries. For a healthy start that you can make ahead and is easily portable, try this Blueberry Coconut Chia Pudding with Grapefruit and pack it into individual mason jars. Another “on-the-go” option are these homemade Blueberry Granola Bars that are also easily stashed in your lunchbox. Looking for a warming option for cold mornings? Make a batch of this Blueberry Breakfast Rice Bowl early in the week to keep you going through until you reach Friday.
