Blueberry Clafoutis

 

Frozen blueberry season has arrived, and we're all for it.

Have you ever heard of a Blueberry Clafoutis before?! This dessert is amazingly simple to make and super tasty too. With a pudding like texture at the bottom, and a puff pastry on top, it’s a dessert that everyone can enjoy! 

 

 

Yields
1 clafoutis

Ingredients

 

  • Coconut oil to grease the pan

  • 1 1/4 cups whole or 2 percent milk

  • ⅔ cup granulated sugar, divided

  • 3 eggs

  • 1 tablespoon vanilla extract

  • Pinch of salt

  • 1 cup flour

  • 2 heaping cups of blueberries, frozen or ripe

  • Powdered sugar, sifted

 

Directions

 

  1. Heat your oven to 350 degrees, and grease a medium-size baking dish at least 1 1/2 inches deep with coconut oil.

  2. Place the milk, 1/3 cup granulated sugar, eggs, vanilla, salt and flour in a blender. Blend at top speed until smooth and frothy for about 1 minute.

  3. Pour a 1/4-inch layer of batter in the baking dish. Bake in the oven for 10-15 minutes until a film of batter has started to set in the bottom of the dish. Remove from heat.

  4. Spread your blueberries over batter and sprinkle on the remaining 1/3 cup granulated sugar evenly. Place in the center of the oven and bake for around 50 minutes, or until top is puffed and browned. Sprinkle with powdered sugar and enjoy while it’s warm with whipped cream or vanilla bean ice cream!
